We have ported over  JIRA issues from an SE to our JIRA board and want to turn a task into a Story so that we do not lose all the details.

The answer is "yes", but there's some complexity.

If your task is a sub-task type (lives below stories), then you will need to use the "convert to issue" option in the options menu.

If your task is on the same level as a story, then in some cases (where config is the same, and the type field is on screen), you can just change it.  If it's more complex, then you will have to use the "move" option on the menu.  This needs you to have "move" permission, and will ask you for project and issue type.  Obviously, you probably don't want to change the project.

All of these possible routes will compare the old and new config for the issue and check that the field data matches.  They will warn you if you are going to lose any field data, and prompt you for mandatory fields if there are any.
