Can I view the search requests made by customers? The text information could be helpful and I assume it is used in order to recommend which knowledge base article a customer should look at.

Is there any way for the admin to view what our customers are searcing for on our knowledgebase. It would be very helpful in order to make better knowledge base articles

Not in Jira, it does not record searches.

But if you are using Service Desk with Confluence as the knowledge base, Service Desk does record what articles people land on when they're looking for something.  If you go to the Jira Service Desk project linked to a knowledge base and find "reports", the "requests deflected" and "requests resolved" might be quite useful.
