When a new customer accesses my Jira Service Desk, they're asked a couple of questions:
Can I change these questions? Or at least change the available options? Or maybe even disable these questions entirely?

When your customer creates an account, they are acctually creating an Atlassian account, that might be used for different Service Desk Portals.
So, there is no option from the Jira Admin perspective to change this processes.
