Bacth update issues in an JSM project?

Is it possible to batch update issues in a project in JSM Cloud?

Or at least - update fields in a list of issues instead of opening each issue?

sure, you can do that by searching the issues in issue navigator and then choosing Bulk change through three dots in right top corner. See the screenshot for the reference:
