I realized that in the recent version I can disable the welcome message (https://jira.atlassian.com/browse/JSDSERVER-1708). Well, I actually just want to change the subject and text.
Is this really not possible at the moment?
It does appear that the feature request you cited only appears to apply to half of the ask there in the summary. In the current versions of Jira Service Desk Server, you can now disable this welcome message. However the implementation of this feature did not extend itself to the ability to customize the content of this message.
For that, there is another linked feature request/suggestion type issue in https://jira.atlassian.com/browse/JSDSERVER-1386 I would recommend watching and voting on that issue as well, however from looking at this, it appears that you already found this feature request and have commented on this here.
I can certainly understand the confusion over the title of the first ticket. To help be more clear on this, I intend to update the title of that issue and leave a note about this change so that other users are not mislead as to the intention here.

The welcome-email and invitation-email are the first messages a user receives. I think that exactly for those messages it is very important to allow to adapt it to the specific needs. It's the first impression a user gets from a companies Service Desk or Support Portal.
