When selecting the Request type of the email channel, it’s important that only the Summary and Description fields are set as required and any other field must be optional. This is because, on the email, the sender can only add the Subject and Body of the email, so it’s not possible to require any more than that.
Please, go to the Project settings > Request types > Select a request type > Request form and confirm if only the Summary and Description fields are set as required:
