I have two users in one project and I would just like these users to be able to see the tasks assigned to them and not all the others task from the project.
Could you please help me on that?

I think your security level should contain two items
Current assignee
Some specific project role - all users in the project must has this role except those two users
All the issues in the project must have this security level set, so it would be probably the best to set it as a default for new issues (if there will be no security level, those two users will able to see it)
