One week ago, I was able to add customers and there's a specific field under their email address that let me choose what organization do they belong. Currently, that organization field is no longer visible when adding a customer. Hence, if just entered the email, the customer was not assigned to an organization.
I wonder if this all Questions lately about things which suddenly not working at service management projects are not tied to release Service Collection and some changes.
The org picker can disappear depending on customer permissions/setup. You can still add org membership from Project settings → Customers/Organizations (or global customer directory), then link users to orgs there. Also check if “organizations” are enabled for that project and whether the user adding customers has service project admin/agent rights.
