Hello! I have a question, if I have 2 different projects on Jira Service Management, will I be charged double or just usual on a single user? Thanks!

As @Adam Jones said, billing is per licensed user, or put differently, a user with product access - the right to use the product.
Once a user has been given a license, he/she can be an agent in as many projects as you want, without any impact on billing.

You should be able to tell by going to Administration (Setting wheel) and then look at your Billing info.
The cost depends on the number of users.
