We have 2 issues which have been dealt with and closed, yet they won't go away from the ALL OPEN queue. I can't see any any of removing these issues or deleting them, and it's at the point now where we just want rid of them.
What can we do?

You need to edit your workflow.
Either add Update Issue Field post function to the transition leading to the Closed status or add a screen with the Resolution field to this tranisition

This is our current default workflow: (this was not setup by me, and I don't really want to mess with it!)
It's working fine for every other issue. It's just these two issues I mentioned before that are sticking, so what is going on here!?
Is there any way we can simply get these stuck issues deleted? We don't need them anymore at all.

You can delete these issues if you grant your user the delete issues permissions

Turns out, even though I was down as an admin, I didn't have this permission. I have added myself to the role, and managed to successfully delete these issues that were sticking.

What is the filter behind the all open filter ? Make sure that your tickets don't match this filter.

How can I check what this filter would be? Sorry, but I didn't set this project up so I'm not too sure where to look. I have had a look around, but can't see filter options.

I'm not sur (im working in jira server) but i think if you click on the three dot in the right of you screenshot you can edit the queue and see the filter behind this queue. But i thing Alexey is right, you need to change the Resolution field to solved in those issues.
For this you will need to change your workflow. And make sure that when you close a ticket you have a postfunction tha set the resolution field to solved or whatever you need.
