Currently there is not nice and clean solution for that. We used some workarounds but these were unstable and prone to get broken.
We raised a feature request at https://jira.atlassian.com/browse/CONF-37129 so please do not forget to vote it and to comment on it, explaining Atlassian how important is to add the minimal level of functionality for working with templates via REST.

As of right now this issue is stagnant and it looks like Atlassian has no intention of fixing this or creating a good solution for the REST API. Check back later. :|

Confluence REST API is in deep development yet. Please see the https://docs.atlassian.com/atlassian-confluence/REST/latest/#d3e120 for the list of possibilities. And as I see from the https://docs.atlassian.com/atlassian-confluence/latest/com/atlassian/confluence/api/service/content/ContentService.html and https://docs.atlassian.com/atlassian-confluence/latest/com/atlassian/confluence/api/model/content/Content.html - there are no hidden variables that could help with POST query (the only one is the metadata). If you need such kind of REST service - you can write / order your own that will extend needed functionality.

The ticket mentioned above no longer exists. The current ticket for adding support for templates to the API is https://jira.atlassian.com/browse/CONFCLOUD-11393 and still hasn't been implemented. It is currently gathering interest, so vote it up!

A bit off-top but might be useful for some teams.
We've made a tool that creates documents in Confluence or Google Drive from the Template with specified recurrence and posts links to a Slack channel. Check it out https://www.notemate.co/
We use it on daily basis for standups, retrospectives and other recurrent meetings. It really helps us to keep notes and follow regular processes.
