Several of our users received an email to join a project today. No one from the admin side sent such a request. Why would this happen and how to we prevent from happening again?

I see you raised a similar question in the Jira Service Desk support queue. Can you confirm this question is indeed for Jira Service Desk and not Confluence, as here?
As my colleague Augusto let you know in your support ticket, the email is from the Customer Invited notification, from when an agent adds a new customer to a Service Desk project.
If you are referring to Confluence instead, there is a feature request to disable the option to invite team members on the first login:
