if I change the e-mail address of an already claimed, managed account, does this affect the user's login? Is the user then forced to use the new e-mail address for his login or are both e-mail addresses still usable for login?

If you use a managed account, you won't be able to directly update your account's email address. Please reach out to your organization admins, only they will be able to update your account's email address. A Managed account is a User who is being managed by an Atlassian organization due to Domain Verification.
