Is it possible to setup security for Greenhopper so that I can give some JIRA users a read-only view of the sprint board? I want some people to be able to see the current status of a sprint without being able to change anything.

Well basically GreenHopper uses JIRA permission to allow users from doing certain actions, which means you can avoid unwanted user to make such changes depending on permission of the project in the board. More information can be found in GreenHopper JIRA Configuration on Permission.
