When I open cards from the mobile application, I find the card due date is different from the one I set on the desktop application

It sounds like the issue might be related to time zones. Trello syncs all the times on its servers, but how those times show up can depend on the time zone settings of the device or account you're using. So if your phone and computer are set to different time zones, you might see different due times for the same card.
