if you want to protect yourself against these kinds of scenarios in the future, then FluentPro, the company I'm part of, might be able to help you.
It has a solution called FluentPro Backup for Trello that protects data against loss caused by human errors. It allows you to choose which data to back up (including checklists) and when to do it. In case of data loss, you can quickly retrieve needed data from a point-in-time backup version.

Welcome to the community! As far as I know, you can retrieve a checklist only if you've archived it. I don't think there's a way to restore deleted ones.
