I use Trello in a personal basis and want to be able to "assign" tasks to other people just for my followup. i dont want to add them to trello and dont want to create fake emails. Is there an option other than to create labels at the card level (doesnt seem to work on checklist level)
Other options to check out are custom fields and Dashcards (a free power-up) - both super useful for tracking in various ways. You can for example create a custom field, let's call it "Assigned to" with a list of names to choose from. You can also choose to show the custom field (in this case the assigned name) on the front of the card.

In Trello Premium, you can assign a board member to a checklist item (you can check it here). I understand that you don't want to add them as a member of your board.
I'm afraid we don't have another way to "assign" tasks to someone if they are not a member of the board.
As it seems you just want to keep track of it, a suggestion as a workaround would be to add their names to the task itself, as in the example below:
