Right now, I'm trying to keep track of all of that info manually, but it would be great it Trello had an automation / power up for this.

A lot will depend on whether the events mentioned would have triggers such that then can fire off a webhook in Zapier and you can then decide write or update Trello.
I have a UK client that takes when a payment is made on a payment request from PayPal, creates a new job card in Trello with the shipping address and a link to the a public invoice link provided by PayPal.
