I added the extention for Trello into my gmail account so I can create cards from emails received and there use to be a subject line and I see since an update or something it is now gone. When I now create a card it uses the subject line from the email without allowing me to change it and now I am struggling to keep track of my cards.
If anyone knows how to fix this, please let me know.

You mentioned you added an extension for Trello to your Gmail account. Could you confirm for me if you are talking about the Trello Add-on for Gmail? Or are you talking about a web browser extension made to integrate Trello and Gmail? For example, this is how the Trello for Gmail add-on looks like:

Yes thats the one.
Once in an email it allows you to create a card.
There is no longer an option to customize the subject which was in turn the name of the card
