Is there any way to add a custom field to enter an email address for each new card and then get this exported to an excel spreadsheet (or equivalent) in order to build an email database for my clients?

You can definitely do that with HTTP request action available under automation. However, it would probably be a lot simpler for you to use Contalist where you can add a contact from any card. If a spreadsheet is what you want, Contalist provides you with the export function and other templates and automation to support your orders.
I am wrapping up a POC that uses Contalist to automate from customer request, to RFQ from vendors, collating quotations and enquiry, customer quote …etc. The intake is from Native Form.
Update : you can tag each contact to different clients if you are collecting emails for them.
Other alternative is just to use the report function, email the contact using - {{%email}} and copy and paste from email to a excel file.
