I have set up a new *service* and corresponding *incident template*, however the details (eg: bridge information) saved in the *incident template* are not used when an incident is created. what role does the incident template play when mapped to the service under a team?

I would recommend submitting a Support Request to us so that we can take a closer look at your set up. The way you've described it should function as intended, when you go to the settings section, if the associated Service is displayed next to the Incident Template, it should be used when that Service is impacted.
