I am new to SourceTree. Every tutorial I can find is related to the older version of the software. Any tutorials for the latest version out there? (youtube/videos links will be highly appreciated). Thanks

I'm afraid https://confluence.atlassian.com/get-started-with-sourcetree/get-started-with-sourcetree-847359026.html is the latest documentation and yes you are correct that it is currently more focused on the macOS version. There are differences between the macOS and Windows versions but the overall principles are the same.
