I may have missed a memo, but my cloud site shows I'm running JIRA 7.0.0 while I cannot find the release notes, and https://confluence.atlassian.com/display/JIRA/JIRA+Release+Summary still states v6.4 as the latest one...
Also, some menu items like Versions seem to be missing (projects now show the agile board by default instead of the old project navigation), as well as the icons for Tasks and Stories having changed...
Is this just silly me?

Yes, Cloud is ahead of the Server releases, but Atlassian don't really say much about the upgrades when it's done.
The project navigation was changed in 6.3 or 6.4, but was optional. There was talk of removing the old style in 7, but I don't know if they've killed off the old style completely, or just flipped it over to be the default (have a look in your profile settings for the flag).
To be fair, Atlassian does announce upcoming Cloud releases at https://confluence.atlassian.com/cloud/what-s-new-686863216.html. Just that due to the agressive timings sometimes Cloud users get to find bugs before any one else does.

According to https://confluence.atlassian.com/jiracloud/browsing-a-project-735937233.html, Versions (Releases) and Components should show up if you have created at least 1, but they don't for me.
