In opsgenie, when a team is added as a responder, everyone on the on-call schedule is notified. Ideally, I would like opsgenie to notify only the person on call that week.
I'm unable to figure out what needs to be configured to achieve this, has anyone done something similar?

When you add a team as a responder to an alert, the alert will follow the team's routing rules. So, if the routing rule specifies to route to either a schedule that has an on-call user or an escalation that routes to the on-call user on a given schedule, that would achieve the result you are looking for.
