So we've add all of our services to OpsGenie and assigned them to teams. We'd like to ensure that every alert that is created is assigned a service so that we can track service health trends across our organization. Has anyone been able to do this; and if not, what value have you been able to derive from the internal service feature?

as far as I understand, it's not possible to directly connect alerts to services. Only incidents can be connected to services.
The idea behind that is: an alert is only an event which is configured to notify me. An incident is more than that: it's an unwanted behaviour in a service, potentially disrupting the service.
So the chain would be: an alert triggers an incident affects a service
You can create Incident Rules to define, which alert(s) trigger an incident. In these Incident Rules you can also define, which (if any) service is impacted or disrupted by an incident.
