How can you go back to a previous version of a feature description after you have saved changes (which should be undone) - we can see the version history via the button below on comments, but I don't see how we can select a previous version.

You can only see description changes in History; however, the formatting isn't preserved.

There is no built-in "undo" feature for such changes.
As you note, some of the information is shown in the issue history, and that could be used to manually revert the changes. There may be marketplace apps / addons which add this capability.

I was mixing jira with confluence. In confluence you have a very nice feature via which you can go back to the previous version. But in jira you don't have this, thanks for confirming this.
