Screens in My Jira Project

Hi, I created a project in Jira, and I want to change the fields for creating, editing, and closing issues within that project. When I go to the screens of the project, I encounter a lot of screens. My first question is, why are there so many screens created for the project? And secondly, which one should I choose to make my changes?

 Go to the Relevant Project > Project Settings > Screens, then you can view the screens associated to the project and issue type.
