I am using External share and want to restrict access to the ticket/issue description. Is there a way to do that? I am currently using the free trial version. I would be curious if this is available in the Standard or Premium version.

What exactly do you mean by "restrict" the field? Do you not want the people with whom you have shared the issue to be able to see the field content? Do you want them to be able to see it but not edit it?
Which External Share app are you using?
Have you reviewed the vendor's documentation for the app to see if that is possible?

It appears that the visible fields can be managed in the Project Configuration settings, per the documentation:
