I've recently added 'resolution' to my Jira project, but when I create a new ticket, it's defaulting the resolution to 'done' and there is no option to clear it. Is there a way to default this so no option is selected as it's causing tickets to be scored out in the backlog?

Short answer - you need to remove the field from the all Create, View, and Edit screens and from any Issue Layouts where you have added it.
When you add the Resolution field to a screen the field will require an entry and will pick a default value. You cannot clear the field once you have it on a screen.
For this reason the Resolution field should never be added to a Create or Edit screen. or added to the Issue Layout configuration .
The Resolution field should only ever be added to a limited purpose screen used during a Workflow Transition, specifically transitions to green/done statuses where you want the user to be able to select from among the available Resolution values.
You also do not need to add the field to the View screens. When the Resolution field contains a value then that value will automatically display next to the Status when you view the issue. If there is no value shown in that area, then the Resolution field is empty and Jira classifies the issue as "unresolved".

Look at the workflow and see if there is anything setting this to "done". Maybe a post function or something.
