Does adding Jira Service Desk make reporting / staus a bit easier to report rather than using Jira itself ? I do not know much about this add on but I need to give visability as well as provide reports for various business / engineering groups. Thank you!

Jira Service Desk only give you reports related to the service desk activity.
If you want to report across projects you'll need to use filters and dashboard gadgets.

Another plugin that gives you easy reports is Intelligent Reports. You can design your report templates in Microsoft Word, then fill them in with JIRA data using simple point and click rules, no scripting or API to learn.
You can design individual reports for each engineering/business group. There are a number of sample reports to get you started, including project progress reports, project timesheets and cross project timesheets.
