Hi, we have recently migrated to cloud and one thing I can not find is the ability to log work on an issue directly in the sprint.
On Server you could right-click the issue and log work from there. Now i have to open the issue and click on timetracking to do that. (Not even the 3dots on the Issue-Side-Panel work)
Is there an configuration I missed, or is it just not possible in cloud. Why remove this?

Your issue really baffled me since that is going in the opposite direction of good UX principles. I dug a little and found this ticket in Support where, from what I can tell, it was meant for Jira Cloud admins and/or users to be able to disable/hide the option, but not entirely removed if Jira Cloud users preferred the Tempo or WorkLog Pro add-ons.
It remains unresolved, though, so hopefully a Support ticket to emphasize the need to keep this feature optional for hiding/disabling will elicit some second thoughts before the ticket is closed. That's weird and tedious!

quick update: I spoke with Atlassian Support and can now split my problem into 2 parts:
1. the 3 Dots on the sidepanel-issue-view did not work for me, I found an UI-Problem with the sidepanel view that cuts off my options so I did not see the "Log-Work" option there.
2, The main problem stands though: directly out of the Sprint it is not possible to Log Work using the 3-dot-options dropdown as it was on Server. Our Users are very much used to it and I don't get the reason why this was removed. I will write a suggestion and link it here too. Thanks to @Walter Buggenhout suggestion I can give them something at least.

After you selected the issue on the board, pressing 'q' on your keyboard opens the log work dialog. Different approach, but might save you some clicks.

this is very good to know.
Sadly, some of our Users are not to keen on Keybinds and we don't want to enforce them. I think that, since logging work is such a crucial part in a/our Sprint-process, it should be very easily accessible and head-on in the sprint view. I gave feedback and hope Atlassian will take the suggestion.
