Does JIRA automatically upgrade? Is there an option where I can disable/enable automatic upgrade? Thanks! :D

No, you have to do it yourself, and upgrading the core system is a manual task. Jira 4.3 and above implement the universal plugin manager, which allows you to upgrade plugins in-situ, but even that requires you to actively choose to upgrade each plugin.
