I had is if I create an issue in Project "DEF" from a Sub-task within an Epic in Project "ABC"

One question I had is if I create an issue in Project "DEF" from a Sub-task within an Epic in Project "ABC", can the issue in DEF update the originating Sub-task issue in ABC? is there any add-on that can do it for us?

The Script Runner add-on would let you do that (and loads more), and I think the Automation add-on does it too. I think there are a couple of add-ons that can do something similar in a more locked-down way.

Can you suggest me which add on do like this, I am using bob shift creation and transition add on is it possible with this add on?

I don't think the Bob Swift one does that, no.  Try the others I suggested.
