I'm wondering about the best possible way for me to connect a custom field connected to a start date for an epic or task that I have in my Gantt chart.

What "gantt chart" are you referring to?

Timeline on a Jira board, then no no custom fields can be shown here or are you using a 3rd party marketplace app.

I will not refer the Jira Plans option, as based on your product plan 'standard', you will not have this option.

I'll soon be moving to Jira Plans and I want to get a head start. Definitely worth including this scenario.

In Plans this would be an option. You can include custom date fields in a Plan
