Can an Org Admin create a new field in Project Settings?

For filtering projects, I want to have three fields when I create a project - Business Unit, Status (Active, Inactive, Compete), and Project Category.  Currently I can go into Project Settings and add the Category (not sure why this isn't visible when creating the project, but I have no way of setting the Business Unit and Status.

Welcome to Atlassian Community!

The short answer is no, currently you cannot add custom fields to project settings. It could be done by adding project properties, but properties are only accessible via the API or automations.
