We have several atlassion products: Jira, Confluence en OPSgenie.
When I invite a user, the invite screen shows a product list with Jira and Opsgenie default checked "on":
Does anyone know how to change the default for the checked items?
I want to have confluence default "on" and opsgenie default "off"
Same question! I don't know why the configuration of the defaults for the product list is not in the same place as the User Access Settings configuration, but I've looked all over product and directory administration and can't find anything to change this.
Still can't find an answer to this, other than a support article from 2016 that is out of date

I recall it is not possible for customers to change those defaults. (Which is a serious problem since the addition of Jira Product Discovery...)
At my last company, we contacted Atlassian Support and they were able to change the defaults for us. If you are on a paid Jira license level, your site admin can submit a support ticket here: https://support.atlassian.com/contact/#/

I was searching for this recently and I think I may have found it back again.
If you go to your Atlassian Admin page and click on Products at the top, then User Access Settings in the sidebar, then click on the "Any domain" or your specific domain, you can set the default product role for each of your products. Which, for us, is just "None"
But this could for self-signup attempts, not invites, so I could be completely wrong here. Would love confirmation if this is right or not.
To update this, this does not work. The only option is as Bill said -- you have to contact support.
I contacted support myself today and used a live chat and the tech was able to change the defaults for us, but I had to share this doc to bring her up to speed:
