There is no way to manage the column under manage project. you can manage the column for issues in advanced issue search screen under the filter tab.
Projects do not have their creation date recorded (the admin audit log gets a line, but those are transient - only kept for a while and cleared down when they're a bit old)
The best you can do is look at "created" on the oldest issue in the project, that tells you when the project was first used, which in most places will be within a couple of working days of project creation.

Thank you. I was able to export our data to Excel with an add-on and capture the "Last lssue last update" field. There isn't a way to do this at the project level ?
