I would like to show the sprint field on the new issue layout, but it seems that the only way to do that is to add the field to the the issue creation screen, but thats just noise as we are not assigning sprints when we are creating issues. Is there another way to get the field to be able to added to the issue layout?
Right, but I am not seeing the sprint field in the issue layout. Does it need to be associated with a screen in order to have it show there or is there another way?
Seems this question has been asked before and the Atlassian team made a few suggestions as to why it wouldn't be showing up (although it should be).

Ensuring you don't have a custom field named "Sprint" or "Sprints" is important.
You can also check to see if this is only happening in Next-Gen projects (as they have newer bugs and different feature limitations). A classic project may be the way to go to avoid these weird occurrences.

We are only using classic projects, so not sure this is relevant and I checked that there is no custom field named sprint or sprints...

Have you gone to Jira Settings > Issues > Screens and ensured that the screens in your Screen Scheme include an Edit Screen with Sprint as an added field?
If it isn't part of the screens associated with the Issue Type, you of course wouldn't be able to add it to the Issue Layout.

You should be able to go into "Issue Layout" in the Project Settings tab and simply drag the "Sprint" field to the visible fields section as seen in picture one.
Once you have done this, you can go to the regular issue view and in cloud instances you can simply click on the field to edit the current value (or lack thereof) as seen in picture 2.
