we had to move our Jira to a new server. Now when I look in "Versions and Licening" I see, that the software is not licensed but below this box, our license key printed.
What to do?

that is usally no problem. Can you check, if your license key is correct entered? And if your license itself is still valid?
You just have to make sure to disable your old server, so that you don't get in trouble with your license.
It might be because as server moves mean changing server-id strings.
But, I would email sales@atlassian.com and fix this.
