How to add Epic Name to the details view of Story or Task?
When I try to find an "Epic" keyword to search all available fields it is not visible:
But I can find it in "custom fields" and don't know how to add it:

The simple answer is: don't. The epic name is specific to epics and does not have any meaning in relation to a story or a task. If you want to show the epic a story or task is linked to, use the Epic Link field instead.
It is also good to notice that some fundamental changes to Epics are being done, that also impact the use of/for Epic names and the way links between issues are defined in Jira. You may want to take a look at this community post to learn more.

The OP is dealing with issues in a Team Managed project. The Epic Link field is not used in those project. You also can't add the Parent or Parent Link fields, as that information is already shown in the breadcrumbs at the top of the screen.
Epic Name is also not used in the Epic issue types in those projects.

As you are working in a Team Managed project, note that the Epics in such projects don't use the Epic Name field. They use only the Summary field in Epics.
Additionally there is not a built in field that you can add to your issue screen to display the Summary of the parent Epic. That information is already available if you hover over the Epic issue key in the breadcrumbs at the top of the screen.
If you feel you must have the Summary of the parent Epic displayed separately within the child issues, you would have to create a custom field for that, and copy the parent Epic Summary value to that custom field.

Walter is right about the epic link. You should add epic link instead of Epic name.
You have to go to Settings next to the avatar on the top right and select "Issues". You need to be jira admin for this or have permission.
Click on "Screen schemes" and select the "Issue type screen schemes" which is associated with the project.
Then select the " Screen Scheme" where you want to add the field.
Type "Epic Link" in the in the select field to add drop down.
Now, you have to go to your project settings as you have done above and search epic link and it should show up and you can add it to the issue.
