I have a question; at the moment we are using Jira Service Management (formerly Service Desk) (Server) for which we are receiving that we need to upgrade, but we are planning to upgrade to cloud from server in January. My question is do I have to upgrade the Core server before I move to cloud or will this be ok till we move to cloud

You should be ok to not upgrade unless there is a security reason to do so.
