Several of my users complained that they are not getting replies to emails. So I did some searching and came upon this:
I have updated the email for notifications as suggested and hopefully that will fix it.
In the meantime, I'm wondering if the emails we did receive at jira@oursite.atlassian.net can be viewed somehow?

I'm glad that you found the article and that it helped.
Regarding the emails received on Jira's mail handler, since it's not a real mailbox, it's not possible to access the messages.
On Jira Service Desk, it's possible to access the logs to see what emails failed to create tickets, but it's not possible to see its content.
Go to Jira Settings (Cog icon) > Products > Email settings > View log > Processing log.
