The sender of the customer notification when the issue is created is based on the portal name, so yes, it’s possible to change that.
If you are using a company-managed project (former classic), go to Project settings > Portal settings.
If it’s a team-managed project (former next-gen), go to Project settings > Channels > Customer portal.
Then you can change the “name” under Service project information.
Note that, this is the name that customers will see in the portal, it won’t affect the project name that agents and admins see internally in Jira.
