We receive a 'Something went wrong' error message when trying to view/edit Portal-only customers in Jira Service Management. I am a Site Admin and User Access Admin. My coworker, an Org Admin is able to view/edit the customers. Is there anything short of making me an Org Admin that will resolve this issue?

Did you ask Atlassian support (https://support.atlassian.com)? They will be able to check logs and find root cause.
