why status is changing globally once changed in one project in jira

This is how Jira works. Statuses are global in company managed projects. So if you change the name of one status, this change in the whole instance.

No, you can't do that. Jira's statuses are global.
You can use a team managed project and create/change statuses inside this project. Doing that will not affect any other project.

I didn't say you can't change it. Of course you can. But change a status' name will take place site-wise. Meaning all CMP projects will now have on their workflow (if they were using it of course) the new status name.
