Restriction on editing fields in the issue

We continue to comprehend the wonderful product Jira!

I have a question, I need your help.

The situation is as follows: the author creates a task, and the task is passed to the performer. Next, the performer needs to estimate the time of completion of this task (enter a number in the task body in the "estimate" field) and edit it in fact.

Question: how do we configure Jira so that the performer can only edit this "task evaluation"field? What should I do to prevent the performer from editing other fields in the issue?

We need this to prevent the performer from editing the task conditions.

We had a similar requirement at one of our clients.

Our approach was to remove edit permission from the assignee.

And we added a workflow transition with a screen that contains the estimate (time tracking) field

So when we want to take input from them we put the field on a Workflow screen between transitions just to eliminate any modification on certain stages of issues
