We have upgraded to the newest version of Jira Service Desk and want to convert classic handlers to next generation
Email handlers and the email channel for service desk projects are not defined as "classic" or "next gen", your upgrade will not have changed anything.
What do you think you need to do to "convert" them? Why do you think you need to do anything?
Atlassian said since my last upgrade the classic handlers will not work in Email This and I had to set up Next Generation

Reconfiguration will do just fine!!
Keep a note the permissions are still applicable.
