I've been the JIRA admin for my team for several years and it seems that in the last JIRA Cloud update the Watcher field is now gone and I can't find it in the Admin panels to add it back to my Service Desk tickets. I can't even find the field any more. Where can I find that field and add it back to my schemes?

If you have the Next-Gen View turned on (to check click Avatar - Settings - Jira Labs (at the bottom)) then on your Jira Service Desk tickets the watcher is now an icon at the top right of your screen. Clicking on it reveals the watcher settings.
Alternatively you can turn off the New Jira View, and the watchers will be normal place on the side of the ticket.
