Just for us to better understand and try to find something that may help you I would like to know if you can share with us more details about your use case and why you need to get this information via API.

Checking our documentation, there are no endpoints available that would get all the activity for individual users.

What shows user activity in Jira is the Activity Stream, but there are no APIs related to this gadget.

You should be looking at the changelog history, that should have the recent activity of the user.
