I've added the desired fields to the ticket view (when entering a specific request), however, I didn't find a way to audit/change the view in the Requests screen.

There is no out of the box solution for this. You can try our app - Advanced Portal Reports. It will show a customizable view of the requests, where the user can see any client field that admin allows, sort columns, export to CSV, etc.
